Cole's Bakery expanding soon

Cole’s Bakery & Café plans to expand its store at 521 E. Holland into the newly vacated neighboring space previously occupied by Italian restaurant, Lasagna's-On-Ya.

Cole’s is a full-service restaurant that offers a breakfast, lunch, and dinner menu along with a variety of baked goods, deli meats, and cheeses.

Jeanine Smith, who co-owns business with her husband, Eric, says the added 2,500 square feet of space will give Cole’s more room to increase its wholesale operations and add to its café seating and bakery areas.

“This expansion will allow us to double our seating capacity, and we’ll be adding a drive-thru window for pick-up orders,” Smith says. “We’re planning to move our bakers into the new space and use it to increase our wholesale operation.”

Smith says the new space will be remodeled soon, although she hasn’t selected a contractor yet.

Smith says Cole’s currently has about 10 employees and plans to hire several more once the expansion is complete.
