Fueled Coffee plans October opening

A new coffee stand named Fueled Coffee Co. plans to open next month in a newly built, 550-square-foot stand at 12303 E. Grace, in Spokane Valley.

Nicole Behar is the sole owner of the new coffee company, which plans to open during the first week of October.

Behar was born and raised in Spokane, attending school at East Valley and the Running Start program at Eastern Washington University.

She says she previously worked at another local coffee stand, before becoming interested in creating her own coffee business.

“I liked it and felt like it was something I could see myself doing long term,” she says. “My parents own a local business, Custom Welding and Fabrication, so they’re helping me get this started.”

Behar says Specialty Structures of Spokane LLC is the contractor that’s been working to build the coffee stand, which should be completed early next month.

The business will start with five employees and is expected to be open Monday through Friday from 5 a.m. to 7 p.m. and from 6 a.m. to 7 p.m. on weekends.

She says Fueled Coffee’s menu will feature coffee beverages as well as food items, including breakfast sandwiches, burritos, and scones.

“I’m hoping to get this stand up and running really well so that in about five years we can expand and add more locations,” she says. “For now, I’m just happy to be able to serve my community with great drinks that will put a smile on their faces.”
