Loon Lake spirits maker adds aged whiskey to line

Owners honing recipes for four planned liquors

Loon Lake-based 2 Loons Distillery LLC, which began operations last fall, has released its first batch of aged corn whiskey, says Trisha Schwartz, who co-owns the distillery with her husband, Greg.

Four more spirits are planned, which would bring 2 Loons’ roster to eight liquors, Schwartz says.

Less than 100 bottles are available from the initial release of the aged corn whiskey, she says.

The whiskey is crafted completely with Washington state corn and has been aged in toasted American oak barrels since September, she says.

The aging process produces a smooth whiskey with notes of vanilla and caramel, Schwartz says.

The small-batch distillery’s namesake vodka was 2 Loons’ first spirit produced for sale. The distillery also produces unaged white corn whiskey and Blackberry Loon Lightning, which is a flavored corn liquor, Schwartz says. 

The couple is working on recipes for gin, bourbon, cinnamon whiskey, and Mint Loon Lightning, also to be produced at 2 Loons Distillery, she says.

Schwartz says she and her husband have no other employees, and they handle all stages of production, including fermenting, distilling, bottling, and labeling 2 Loon products.

The spirits currently are only available for purchase at the 2 Loons Distillery tasting room and store located at 3950 E. Third in Loon Lake’s business district, about 30 miles north of Spokane.

The aged whiskey is available only in small, 375 milliliter bottles, which are priced at $25, including Washington liquor and sales taxes, Schwartz says.

Vodka also is priced at $25 for the 375 ml bottle and is available in a regular 750 ml bottle for $40.

White corn whiskey and Blackberry Loon Lightning are priced at $22 for a small bottle and $35 for a regular bottle.

The 2 Loons Distillery has a 100-gallon still and produces about four cases of spirits a week, Schwartz says.
