Amy's Donuts coming to Spokane Valley

Amy’s Donuts, a small chain of donut shops that originated in Colorado Springs, Colo., plans to open its first Washington store this fall in Spokane Valley.

The company is co-owned by husband and wife team, Amy and Chin Kim.

Chin Kim says the shop will be located in the old Abelardo’s Mexican Restaurant, a 3,300-square-foot building at 11519 E. Sprague, which the couple recently bought from its former owners.

Kim says the pair purchases a property and moves to the area for several years in order to manage the shop until it grows into a sustainable business.

“We’re still a small, mom-and-pop operation, but we do hope to transition into a franchise one day,” he says. “For now, this routine works out well for us, as we’ve consistently opened a new location about every two years since 2013.”

Kim says Jongeward Construction & Development LLC, of Spokane, is the general contractor for the remodel, and Russell C. Page Architects PS, also of Spokane, designed the project.

“The space will be completely transformed, with new bright lights and signage,” says Kim. “Construction is expected to start this month, and we hope to have everything completed by October, with a grand opening tentatively set for early November.”

Amy’s Donut Shops offer fresh-baked donuts daily that come in a variety of flavors and colorful, creative toppings, he says.

“Our goal has always been to serve fresh donuts in a bright, kid-friendly atmosphere,” Kim says. “We have over 120 different flavors of donuts, from simple glazed on up to crazier toppings, like creamy jalapeño.”

Kim says the Spokane shop also will provide freshly roasted organic coffee, from a yet-to-be determined local coffee roaster.

And, because all Amy’s Donuts locations are open around the clock, Kim says the new shop will likely need to hire between 60 and 70 employees to help with operations.

The Spokane Valley shop will be the chain’s fourth location overall, adding to its other locations in Colorado Springs; Tucson, Ariz.; and Columbus, Ohio.
