Atania Gilmore has leased an 1,800-square-foot building at 4803 N. Nevada, where she plans to open a vegan restaurant.

The restaurant, to be named Allie’s Vegan Pizzeria & Café, will open this spring at the northwest corner of Broad Avenue and Nevada Street in the Nevada-Lidgerwood neighborhood, on Spokane’s North Side, Gilmore says.

“I’m targeting it to be open by St. Paddy’s day,” she says. “I have a Reuben pie I want to offer.”

Allie’s will have an initial staff of seven to 10 employees and will be open seven days a week for lunch and dinner, Gilmore says.

The restaurant will focus on healthy dishes made with locally sourced organic ingredients wherever possible, she says, adding that the entire menu will be made with no animal-product ingredients, and will include entrees made with meat substitutes and dairy-free cheeses. Allie’s also will offer locally crafted vegan beers and wines.

Standard 12-inch pizzas will be priced from $11 to $15, she says.

The restaurant will seat up to 49 people and will have a deli counter for takeout sales.

James S. Black III and Chris Bell, both of the Spokane-based commercial real estate brokerage NAI Black, handled the lease.
