Fourth area Qdoba opens here

Regional company plans two additional eateries here within 18 months

A Qdoba Mexican Grill regional franchise owner has opened a new Qdoba restaurant in Spokane Valley, its fourth outlet in the Spokane-Coeur d'Alene area, and says it has plans for two additional restaurants here in the next 18 months.

The franchise owner, CC Northwest LLC, opened its newest Qdoba outlet at the end of May in a 2,400-square-foot space at 1527 N. Pines, at the southwest corner of Pines Road and Mission Avenue. It also operates two Qdoba restaurants in Spokane and one in Coeur d'Alene.

"We've been asked for years if we have a site in the Valley, so we've always had an eye on Spokane Valley, and we were just waiting for the right location," says Henry-Scott Simkins, a Qdoba regional vice president of marketing.

Simkins says CC Northwest LLC owner Stan Pine also plans to open two more restaurants, a fourth Qdoba in the Spokane area and a second one in Coeur d'Alene. he says, "We hope to have them open in the next 18 months."

Vandervert Construction Inc. completed the Valley site remodel. Huckleberry's Paper Patch scrapbook store had occupied the spot.

The two established Qdoba restaurants in Spokane are at 901 S. Grand, on the South Hill, and at 7115 N. Division, on the North Side.
