Woodinville, Washington-based Locust Cider & Brewing Co. plans to place its first taproom in Spokane in the former Huppins building, at 425 W. Main downtown, this fall.

A city of Spokane permit application lists Post Falls-based Basso Construction as the general contractor and Uptic Studios Inc., of Spokane, as the project architect. The cider bar will occupy roughly 2,400 square feet of space.

“Having watched the amazing growth in Spokane over the last several years, we knew we wanted to be a part of it,” Locust co-founder Jason Spears says in a press release.

Locust Cider & Brewing offers 16 taps made up of 10 cider flavors, with core favorites that include dark cherry vanilla and honey pear. 

The company says it draws on sourced apples and grain from across the Pacific Northwest, working with both some of the largest growers in the world and those that operate on as few as two acres.

Spears and his brother, Patrick Spears, founded Locust Cider in 2015. Locust has a beer and production facility and taproom in Woodinville, standalone taprooms in the Seattle neighborhoods of Alki Beach and Ballard, and in Tacoma. Additional cider production facilities and adjoining taprooms are in Boulder, Colorado, and Fort Worth, Texas.
